Hi Kalei, while this method would certainly work, there is a benefit to keeping your "mother" starter out at room temperature during the building refreshments. When the starter is in the refrigerator it is surviving, but not really thriving. Allowing it to go through a few feeding cycles at room temperature leading up to baking will do much to restore its normal activity level and keep it healthier in the long run.
