Hi Barb, I have been maintaining a small sourdough starter for several months now. I find that the 1:1:1 ratio does not last 12 hours before it peaks. This is true even now that it is colder and the room temperature is at 68 degrees. I thought before that feeding should be done when the starter peaks. Are you saying that this is not necessary? This will make my baking life soooooo much easier. I live in constant fear of missing the peak (just kidding :).
