Hi Kathy, I think maintaining 2-3 ounces (roughly 60-90g) should theoretically work fine, but I've never actually left a small starter in the refrigerator for that length of time, so it might be safer to stick with the 12 ounces (339g) maintenance amount we normally recommend. The bulk will at least provide a bit more protection if your refrigerator fluctuates in temperature during this time. In any case, your starter is likely to need 3-4 days of twice a day feedings at room temperature to bring it back to full vitality when you return.
