I split my time between 2 houses, and have to leave my starter in the frig unattended for 6 months at a time. Will this smaller amount of starter work for that, or should I prepare a larger amount of starter? I have one starter at 50% hydration, and one at 100%. Thank you for all of the wonderful information your site provides!
