I currently keep my sourdough starter in the fridge and feed it at least once a week or before I want to bake something. I have another jar in the fridge that I dump the discard into. My starter has been active for over a year but my problem is always what to do with the discard. How long can I keep it before it goes bad? I found a recipe for sourdough waffles with discard but it said the discard has to be fed first. I originally thought I could just use sourdough discard in recipes straight from the fridge. Any tips?
