Hi Deborah, you could certainly give this a try, but I think if anything you may be sacrificing some rising ability rather than flavor. Frequent smaller feedings seem to benefit the wild yeast portion of your starter more than the lactic acid bacteria (LAB). On the other hand, replenishing with larger, less frequent feedings seems to favor the LAB, which ultimately contribute to flavor.
To be honest, I've never maintained a starter this way, so I'd love to hear how it works for you if you decide to try this method.
