I have learned so much from these comments! For several weeks, I’ve been maintaining my counter-top starter with a 2x daily feeding of 5-25-25. With the warmer weather my starter was flattening by feeding time. I’ve just increased to 5-30-30 and the timing seems just right for feeding every 12 hours. If the ratio were increased to 5-50-50, could the feeding be cut to once a day without sacrificing flavor?
