Hi. I’ve been feeding my starter (kept on counter) at 12-hr intervals. I’ve read that a strong starter should double/triple within 6-8 hours and that you should feed starter at peak rise. Mine is falling by 12 hours. Am I feeding it too late?
And I’ve seen some instructions to feed a larger amount of flour once a day vs smaller amounts twice a day. What’s ideal? I’m currently baking every 3-4 days and maintaining a smaller starter which I use to build my leaven. This is all new to me and I’m trying to find the ideal feeding schedule.
