Brilliant! Totally makes sense and it makes the starter more manageable. I find that keeping the starter in smaller quantities also shrinks the tools needs - smaller spoons, thinner spatulas, lesser feed amount. Also, I found a wonderful use for my stockpiled Oui Yoplait and St. Beniot yogurt glass jars. I now only keep 60g starter in the fridge and bake on weekends, building up the starter amount called for in the recipe within 3 feeds. Just to be safe, I did freeze a jar of Lord Souron and also dehydrated a cup and stored them as backup (known as Flaky Souron). But so far, a smaller starter is really working well.
