Hi Kim, it doesn't take a vast amount of flour to create a sourdough starter, and you can definitely reduce the quantities in our regular sourdough starter recipe if you'd like to start small. You may also be interested in checking out Debra Wink's Pineapple Juice Solution for an alternative sourdough starter method that uses very little flour and is meant to overt the lull in rising that can sometimes occur midway through the sourdough creation process.
