Hi! I’ve been diving deep into your site and my new baking cookbook arrival (yay!!) and am still mystified by starting a SD starter. I love the idea of maintaining a smaller starter - can I start with a small one too? The 113g 1:1:1 ratio might blow through too much of my flour stash. Suggestions?? Thank you!
