I just commented on Martin's last blog post that I thought highlighting this would be a great idea now in the time of hard-to-find flour, and here it is! I have been doing this for a while (even before the quarantine started), and find it very easy. Sometimes I do want some discard to make crackers or the amazing sourdough cinnamon crumb cake, so then I just feed it more than I'll need for whatever bread I'm making. Thanks so much for all you are doing during this trying time. And I have to say, yesterday when my credit card was charged for an order of your flour that I put in a couple of weeks ago, I felt like I had won the lottery knowing it will ship sometime soon! Thanks again for everything! You guys rock!
