Hi! I am on day 5 of my first starter. I originally starter with 1/2 cup flour and 1/2 cup water and had been feeding twice a day. On day 3 there was a lot of hooch that developed overnight. I drained it and continued to feed but it never doubled size again. After doing some reading I figured it may be better to scale down the starter in order to waste less flour (flour is a hot commodity right now). This morning I took 20g starter (not sure if it is even still alive, 20g water, 20g flour. That will give me 60g, so to maintain do I keep transferring 20g starter to maintain 60? Sorry, beginner here!
Also how can I tell if the starter I transferred was a lost cause? I have my discard saved as a backup in case but not sure when to call it quits. Thanks in advance!!
