Hi Rosalind, it's a little confusing because the jars are 8 ounces by volume, but the 8 ounces of ripe starter you'll need for a recipe is a weight measurement. You're totally correct that the jars will be too small for more than the maintenance amount of 2 ounces (by weight) of starter. To increase your starter you'll definitely need to move it to a larger bowl or container. Barb
