Thanks so much for providing this link, Marcella! It also occurred to me that Debra Wink's Pineapple Juice Solution Starter Method, requires very small quantities of flour during the initial part of the process and also doesn't call for discard until the wild yeast kicks in. This method helps overcome unhelpful bacterial growth at the beginning of the starter creation process, and can help avoid the related lull in yeast development. Barb
