Hi Tom, thanks for sharing your smaller starter routine with all of us! It's amazing how many great minds think alike when it comes to reducing starter size! I'm not sure why you've experienced difficulties with reviving your dried starter, but we've found a mature starter will generally survive well in the refrigerator for a month or even longer, as long as you're willing to give it adequate revival feedings at room temperature when it comes time to bake again.
