Hi Mark, thanks for contributing your insights on maintaining a smaller sourdough starter! It's true that a mature starter is quite resilient and will likely revive fairly easily, even after a month of refrigeration. This is great reassurance for those who find it hard to keep up with regular feedings! It is important, however, to be sure to do enough post-refrigeration room temperature feedings to bring your starter back to full vitality before baking. Barb
