I've been maintaining a small starter since bringing it home from a KA class seven years ago. I keep it in the fridge, feed it a 1/8 to a 1/4 cup every 10 - 14 days, leave it on the counter overnight and return it to the fridge the next morning. I start building it up about three days before using it.
