Hi Margie, I consulted that section of Jeffrey Hamelman's book when writing this post, which is what made me think about the positive effects of adding a few midweek feedings. I love that you took the time to test your refrigerated starter against a starter fed twice daily at room temperature! I believe there's a little scientist in all of us sourdough bakers.
