I chuckled at this because I have maintained a small starter for years; I didn’t know that was considered “wrong.” I initially switched to a small starter because of how quickly the amount of starter reaches epic proportions if you don’t discard. I kept with the small size because it took up less space in the fridge. The bonus was that I could also have starter with me in my camper where space in the small fridge is at a premium. That evolved into me giving starter to some fulltime RVers who thought they wouldn’t have room to keep one.
