I keep my 9 year old starter in the fridge all the time in a jar. I bake a loaf weekly. I give it a half feeding (by volume) and put it back in the fridge. Next week, I give it the other half feeding. After sitting out for an hour, it's back to its bubbly-ness. I have never done a discard!! I don't understand the need to do so.
