I have been teetering on the edge of getting back into sourdough baking, and this has just tipped the scales! Years ago I just couldn't keep up with using the discard and it made me so sad to throw it away, so I gave what starter I had to a friend and moved on. With this method, I'm positive I can keep up with a weekly bake, and a couple of tablespoons of discard won't be so hard to watch go down the drain. Thanks again, King Arthur folks, for making me excited about baking!
