Hi Cheryl, I tested this out in the test kitchen today to see how the pie dough would turn out. Good news! You can go ahead and use an equal amount of unsalted grade AA (most standard butters at the grocery store) in place of the European butter without making any changes. The resulting dough may be slightly less tender because it will contain less fat, but it'll still be a dream to work with and should bake up just fine. Happy baking!
