You can definitely pre-dip them, Cathy! I would recommend refrigerating the pretzels slightly prior to to dipping them, this will allow them to stiffen up and make them easier to handle. I would bake them within 4 hours of being dipped if you can, but I would wait until the last moment to put any pretzel salt or garnish on so that it doesn't dissolve in the holding period.
