How far in advance can one dip pretzels in the lye solution? I'm looking to make very large pretzels which are awkard to dip, especially after they've risen. Would it be possible to dip the unrisen strand in the lye, and then shape it directly on a pan for it to rise (probably 45 minutes) before baking. Does extended exposure to the lye solution affect rising/flavor?
