Hi Bruce, draining the pretzels on a stainless steel rack over parchment paper for a few minutes after the water bath, as recommended in this blog post, will definitely help minimize sticking. Using sprayed parchment paper or a silicone baking mat during baking will also help. I don't think cooling them on the pan for a few minutes is likely to help avoid sticking. The type of parchment paper we sell is safe to use up to 450°F.
