I freeze for at least 2 hours the unbaked, formed pretzels before dipping in lye solution. Stiff pretzels are easier to dip with tongs. After lye, let them thaw and rise for an hour and a half. Salt and bake. Pretzels that are well wrapped last in freezer for a month.
