Hi Debi, that's a tricky one! If you're making a recipe that is primarily wheat flour, with some added non-wheat grains, then I would count just the flour. However, if you're making a gluten-free bread recipe that is made up of all non-wheat flours like cornmeal and sorghum flour, then those flours are definitely counted as part of the flour percentage. In general, whole grains like oats aren't counted as part of the flour content.
