Thanks P.J., great work. And food for thought for further experimentation. In "Secrets of a Jewish Baker" by George Greenstein he offen adds some stale bread to the dough. Is there a parallel here? I have to look it up just what they s 3 generation baker does. And what he calls this slips my mind. Have you heard of it? Best Wishes, Gene
