Hi Barbara, we do recommend beginning with a gallon of apple cider, so I wonder if your results are because you began with a smaller quantity, which was perhaps spread out more thinly in a larger pot? This could have caused the cider to cook down too quickly, even when simmering, which could have led to the results you describe.
