Thanks for posting this. Ive boiled cider before without issue, today I boiled some down that I purchased from Target, not even thinking about preservatives. The boiled down substance was the right color, quantity and taste, but consistency-wise it was almost like a jelly when cooled. I thought that was odd, but planned to use it anyway in my apple cider caramels since the flavor was right. Curiosity urged me to look into why the consistency was off and I'm glad I did. Off to get some better quality cider and give it another try!
