Diana, while the Instant Pot is wonderful for making many other types of recipes, it's not well suited to making boiled cider. The liquid wouldn't cook down properly if cooking at pressure, and if using the "warm" feature, it would take a long time (possibly days) to cook down all the way. So while we love our pressure cookers, this is just one of those recipes that's best made on the stovetop.
