Flour is evil. Like, active ill will towards humans. Flour wants us to suffer.
I have tried being reasonable with flour. There is no redeeming its wicked, spiteful, malevolent nature.
And expert-baker writers who write things like "I know you may have had your challenges before, but just apply a little gumption and delicacy / firmness and you'll be baking like a pro in no time!" just make things worse. Where's the author writing "Flour is tricky and black-hearted, and you may never get it. Be at peace with that. And just when you think you might be getting it, it will stab you in the back. And it makes a huge mess, always. But if you want bread, or pie, or cake, or biscuits, which are awesome, you're going to have to find the magic and come to terms with flour, with all its challenges." Nowhere. Because the authors always lie, and imply that success is just around the corner. Nonsense.
I know King Arthur Flour sells flour. I know that. Maybe I'll feel better about flour after my recent failures recede out of memory. Right now, it is a thing of malice.
