Aw, Carolyn, I love your closing sentences... Kudos to you for remembering your mom via pie! I agree, making the crust is the challenge for most people (including me); I don't have the freezer space to keep rolled-out crusts, but I do keep frozen disks of dough. And yes, I make the dough in my stand mixer! It cuts in the fat just fine on medium-low speed, then I add the liquid and mix VERY briefly before gathering it into a ball by hand. Try it sometime, you may be surprised! PJH@KAF
