Thanks for this encouraging post, PJ - great to be reminded of the keys to a successful pie crust, with pie season (the holidays!) upon us. A couple of years ago, I took a pie-making class at the King Arthur Flour space in Washington State, taught by Kate McDermott ("Art of the Pie") - wonderful class, and wonderful teaching space! Kate's words have stayed with me when getting the ingredients for pie crust to come together: "stop before you're finished". She taught us not to over-mix the ingredients in our bowl, to combine the basic four ingredients just until they came together and not a moment more - "stop before you're finished". Remembering that bit of advice helps me each and every time I make a pie crust.
