Hi there! You'll have to do some experimenting with corn syrup in cakes. We've tried liquid sweeteners, like honey, in them and found that it made them more delicate and a bit denser. You might like to check out our Baking with liquid sweeteners blog article to see what the results looked like and for some suggestions on ratios for substituting liquid sugars for granulated.
