This sounds like the best plan ever, Stacey...four kinds of pie. For everyone! (At least, I'd have a slice of each!) I'm thinking 8 cups might be a little too much, however, it's really never a bad thing to have some extra pie filling on hand in the freezer. It'll keep well in there for up to 3 months so you could pull it out to make mini pies or tarts any time of year. Each 1/4 pie in your sheet pan will likely use closer to 6 cups of filling, but I'd make 8 cups just to make sure you don't wind up being short on any of them. Happy baking and happy Thanksgiving!
