That's a daunting task, Gabrielle, but I think it could work. First, you'll want to line your sheet pan with two pieces of parchment paper, positioning them so a good couple inches will hang over both ends. This will act like a little parchment sling later on so you can lift the pie out. Once your pie is out of the oven, run a knife around the edges to loosen anything that might have stuck, let it cool, then freeze it. It'll be infinitely easier to lift and move if it's frozen. This should work for baked fruit or custard pies. Once it's frozen, you should (possibly with the help of a couple other hands) be able to lift the full pie using the parchment sling and lay it on whatever you want to; a piece of cardboard would probably be the easiest thing, just be sure to support it from the bottom.
