Thank you for this lovely and helpful article. I have to pipe up for my absolute favorite apples (for pie and everything else): Gravensteins. They have an incomparable flavor, texture, and perfume. They're only available around here (the central coast of California) for about 3 weeks a year, so each summer I buy a ton and freeze them. I've heard they don't travel well, sad to say.
