Jodi, it sounds like some of the tips in this post could be helpful for you! To some degree, apple pie slices will always have a little runaway filling, but extra thickener and good, firm apples can help. Also, make sure your knife is regularly honed and sharpened. A dull knife can definitely cause your crust to smoosh into your filling a bit (that's the technical term, we promise), which in turn gives your filling nowhere to run but out onto the plate.
