Shari, so glad you discovered Instant ClearJel! I've switched over to that thickener as well; it seems quite versatile and foolproof. And also, huzzah for your Florida farmers' markets — and your work in turning their bounty into "crave-worthy" pies. I'm sure your husband is thrilled... PJH@KAF
