Sweet apples need very little sugar, Barbra, it's true; as another commenter here said, it's always good to taste the apples before deciding how much sugar to add. I do like to add some; I feel it helps with the filling texture, but kudos to you for cutting way back on the sugar, flavoring with spices, and "letting the apples speak for themselves." PJH@KAF
