Very interesting article, PJ. I have a tried-and-true recipe for apple pie that has never come out runny. However, some of the suggestions in the article and from contributors peak my interest. I'm going to have to try them all, just for fun and have family and friends "judge" which they find the best.
My favorite combination of apples is Honeycrisp and good old Cortland. I add freshly grated nutmeg to the cinnamon, but just a little. Also, I go easy on the sugar, as others have suggested. Let the delicious apple flavor shine through!
