I have always put a layer of dry bread crumbs mixed with a little cinnamon and nutmeg on the bottom crust before adding the apple mixture. The crumbs absorb the juices and leave the bottom crust perfectly baked. The crumbs give an extra layer of sweet apple taste to the pie.
