I’ve made banana bread with over ripe and oven ripe bananas. Hands down over ripe was the best tasting! You are the first I’ve seen that does not recommend the oven ripe method and I agree! There was such a noticeable difference in taste I don’t know why people recommend oven! Be patient, trust the process, use naturally over ripe!
