I like to caramelize over ripe bananas with butter and brown sugar. I use a nonstick pan, add 1" pieces of banana, brown sugar and butter. Saute until the sugar and butter become thick and the bananas are browned. Cool, mash and add to your recipe. Or freeze in a zip bag until you need them.
