Deb, if you have the time to deal with those overripe bananas before freezing, then that's the way to go. If I was more organized I'd freeze banana purée in 16-ounce packages (since that's what my favorite banana bread recipe uses); one of these days (maybe when I'm retired) I'll finally get my act together!
