And if you suddenly have way too many frozen bananas (they breed in the freezer during July and August), defrost them and decant into a measuring cup until you have as much as you need for your family's favorite recipe -- usually 3 medium sized work for my recipe. Stir a bit to reincorporate the juice and then pour into a pint or quart bag, depending on the recipe. Flatten the bag as much as you can without it leaking, seal the bag, and freeze it flat. Repeat as needed. Now you have a neat stack of easily thawed pre-measured bananas.
If there is any decrease in quality due to using refrozen bananas, none of the taste testers in my family has ever mentioned it.
