Instead of putting the bananas in the freezer in their skins, I like to peel the overripe bananas, put them in a ziplock bag and smash them up, then put them in the freezer. That way they are ready to go for your banana bread as soon as they are thawed. It seems a lot less messy for me this way. I like to use quart bags and fill them, as I can, until there is just enough for one recipe of the banana bread.
