Loved this article. I lived not too far from you thirty years ago (moved north to the Burlington area). There was a Brigham’s Orchard where I got a recipe for Nina Brigham’s Apple Crisp. It’s still my favorite apple crisp recipe, no oats! Mix 4 c. sliced , peeled apples with 1/2 c. brown sugar & 2 tsp. lemon juice (I add cinnamon here) Arrange in 10x6x2 pan. Mix 1 c. flour, 3/4 c. sugar, 1 tsp. baking powder & 1/2 tsp. salt. Add one slightly beaten egg & mix till crumbly. Pat onto top of apples. Drizzle 1/3 c. melted & cooled butter over top & sprinkle with cinnamon. Bake at 350* around 35 minutes. May be doubled in 13x9 pan. Bake 10-15 min. longer.
